Coober Pedy is a town in South Australia, famous for its opal mines, and probably even more famous for many of the houses being underground.
I actually first visited Coober Pedy as a 14-year-old, and remember staying in an underground hotel.
Not everything is underground, however, and it is quite a busy town, being one of the main stops for people heading up (or down) the centre of Australia.
We enjoyed a tour of Tom's Opal Mine (https://www.tomsopalmine.com) while we were there.
And the pizza at Nostimo (https://www.lifestyleparks.com.au/stuart-range-nostimo-pizza/) was amazing!
